Welcome fall with this delightful Butternut Squash and Goat Cheese Galette made easy with puff pastry.

This post is sponsored by Pepperidge Farm® Puff Pastry. All opinions are my own.

Fall is here and so are the fall bounties. One of my most favorite fall vegetable is the Butternut Squash. Way more than pumpkin anything. Recently I had the combo of butternut squash and goat cheese in some dish at a restaurant and I loved it so much, that I tucked away the combo reference for future use in my brain.

The future was not too far and I used it to make an amazing dinner for us over the weekend.

Whenever I thought of galette, I always think of something sweet. Something that is made painstakingly. The image that comes to my mind is someone working with the pastry dough in the kitchen, for hours and covered in flour.

I love spending a lot of time in the kitchen, but that’s not my idea of a weeknight dinner and definitely not my idea of time spent on just one dish. If I spent that much time in the kitchen, I am getting out with a refrigerator full or at least 5-6 dishes to last us a few meals.

That’s where the Puff Pastry magic comes in. I used Pepperidge Farm® Puff Pastry as my dough for this savory galette, that took me way less time than it would have to make my own pie dough and the flaky delicious crust made it so much more delightful. Trust me, you guys, it takes so less time to make this. Once you have the thawed Puff Pastry Sheets ready for you, all you need is mix up the filling, roll out the Puff Pastry Sheet, add the filling, do a rough fold over the top, bake and ta-da, dinner is ready!!

What's your plan with the egg though? Re-read this thing a few times and still not sure if it goes in with the squash or if it's for an egg wash

Unfortunately the raw squash did not cook through in the 20-25 minutes in the oven for us. The second time around we cooked the filling in a pan first, cooled it, then baked in the puff. With this change it was a 5/5 recipe.
Also couldn’t find the garlic and egg in the directions, but it’s not too hard to guess where those go. 😛 (We skipped the egg wash and it was still great.)

I am so sorry that the squash did not cook through for you. It is supposed to be a little firm and hold its shape after its done. But anyway, glad you figured out a way to make it work. I will test the recipe one more time to see what other tips I can add to make it work the same for everyone. Thank you for leaving a feedback.

FAQs

Do you have to peel butternut squash before baking? ›

It's important to note that while many people choose to remove butternut squash skin (and this is best practice for soup making, where you want smooth results), you can 100% eat roasted butternut squash skin. Slice butternut squash into crescents and roast it with the skin on.

How do you roll galette dough? ›

Remove the dough from the plastic wrap and roll it out into a 12 by 12-inch circle. It's okay if the circle isn't perfectly round. In fact, my galette dough usually appears quite rustic and I like it that way. For a perfect circle, simply use a pizza cutter to cut off any uneven edges.

What does roast butternut squash taste like? ›

Golden brown, caramelized, and seasoned with salt and pepper, it has a delectable sweet and salty taste and buttery texture. If you've never roasted butternut squash before, you have to try it this fall!

Should butternut squash be cooked face up or face down? ›

Is it better to roast butternut squash face up or down? I personally prefer to roast my butternut squash with the cut-side-up. In my opinion, roasting it cut-side-up allows for the butternut squash to caramelize, rather than just steam and cook.

Should you wash butternut squash before cooking? ›

That's why it's important that you wash all winter squash with warm water and soap before you place it on the cutting board for prep. When you place an unwashed squash on your cutting board or cut through the potentially contaminated surface with your knife, you're pulling germs right into the part you're going to eat.

How does Gordon Ramsay cook butternut squash? ›

In a large bowl mix the cubed squash, garlic cloves and ginger with 2 tablespoons of olive oil and 1 tablespoon of the spice mix. Season with salt and pepper and scatter in a single layer in a roasting tray. Place in the preheated oven and cook for 30 minutes until tender all the way through.

Is butternut squash healthier than sweet potatoes? ›

To begin with, the butternut squash beats the sweet potato with fewer calories, carbs and sugar per serving. Moreover, it is rich in calcium, magnesium, potassium, and vitamins B6 and E. On the other hand, the sweet potato, however, provides more fiber and protein.

Why is my roasted butternut squash soggy? ›

Insufficient roasting time: Butternut squash needs sufficient time in the oven to roast and develop that crispy exterior. Roast until they turn golden brown on the edges, and the texture becomes tender.

Can you eat butternut squash without peeling? ›

You can eat the skin, so there's no need to peel it. Simply halve it, scoop out the seeds and chop it into chunks, then roast it and add it to a warm winter salad or throw it into curries, stews or soups.

Should skin be removed from butternut squash? ›

Use a sharp knife (or a sturdy vegetable peeler) to carefully remove the skin. Alternatively, the skin can stay on because it's edible when roasted! But if adding to a soup (or recipe where it won't be roasted), remove and discard.

Is the skin of butternut squash edible? ›

All squash skin is edible. However, in the same way you wouldn't eat a banana peel, edible doesn't necessarily mean you want to eat it. Some squash has thin skin that's tasty and tender, while others have a tough shell that even cooked is chewy and stringy.

What is the best tool to peel butternut squash? ›

In the case of one of our top picks, the Kuhn Rikon Piranha Y Peeler, its serrated edge was particularly helpful during the butternut squash test. It was able to catch onto the thick, tough skin immediately and peel it away smoothly and without much resistance.
